Caprese Verrines

Today I am honored to be guest posting on one of my new favorite blogs, Lazaro Cooks!. Lazaro is an incredible cook, creating amazing sophisticated dishes at home, such as these scrumptious scallop bites with fig dipping sauce he made for his wife's birthday dinner last week. He was also the 5 Star Makeover Pasta Winner with a stunning makeover of Linguini Carbonara with white wine pasta and caramelized bacon.

The dish that I made for today's guest post is a makeover of a Caprese salad in a verrine of Mozzarella-Greek Yogurt Cream, Basil Emulsion, and Tomato Granita.
