
Compound butter is an excellent way to introduce a lot of flavor to a simple dish such as grilled steak or fish. It is easy to make in advance or at the last minute and it can be made with whatever you can find in your pantry or your fridge. To avoid extra cholesterol and calories, I typically choose to make a "lightened up" compound butter with a butter substitute such as I Can't Believe It's Not Butter. Recently, I Can't Believe It's Not Butter sent me their butter spread to sample and I find it just as flavorful as butter and great to use for every day cooking and baking.

I decided to make my compound butter with smoked sun dried tomatoes that I found in my pantry last night. Flavored with Himalayan pink salt, this butter was amazing on top of the grass-fed filet mignon.
Ingredients:
1/3 cup smoked sun dried tomatoes
1 tablespoon olive oil
1 tablespoon balsamic vinegar
6 tablespoons I Can't Believe It's Not Butter spread
Himalayan pink salt to taste
Directions:
Combine smoked sun dried tomatoes with olive oil and balsamic vinegar in a food processor and mix well into a paste consistency. With a spoon, mix in the butter spread (the butter substitute will already be soft so no need to bring it to a room temperature as would need to do if using real butter). Season generously with Himalayan pink salt to taste. Roll into a log in a plastic wrap. Chill until firm. Serve on top of grilled meat or fish.
