
At King’s Arms Tavern in Colonial Williamsburg we had a glimpse at different kinds of traditional foods that Virginians ate during Colonial era. We discovered that relishes were a very popular starter served with special crumbly bread called Sully Lunn. I decided to create my own relish combining the three traditional ingredients, red peppers, corn, and ham. This relish can be served as a starter or as a side to a meal, and it is a wonderful dish to make for Thanksgiving.
Ingredients:
1 tablespoon olive oil
1 teaspoon garlic salt
1 large red pepper, cut in 4 quarter slices
1 cup corn
1 cup ham, finely chopped
Pinch of salt
Pinch of pepper
1 tablespoon sugar
1 tablespoon corn syrup
2 tablespoons white vinegar
Directions:
Pre-heat oven to 450° F.
Place red peppers on a baking sheet. Pour olive oil over them and sprinkle with garlic salt. Roast peppers for about 10-15 minutes or until skin starts to blacken. Set aside and cool.
Place peppers in a food processor until they are finely minced.
To the bowl, add peppers, ham, corn, salt, pepper, sugar, corn syrup, and vinegar. Mix well.
Refrigerate for a couple of hours for flavors to develop. Can be made several days in advance. Serve with toasted bread.
